A time to make pies

Link - Sunday is National Pie Day, a day to make pie, eat pie and, most of all, to share pie memories. The American Pie Council says our pie heritage is fading away, slowly but surely.

In honor of National Pie Day on Sunday, here's my Lemon Icebox Pie recipe:

1 homemade or storebought graham cracker pie crust
3 eggs, separated
3 lemons, juiced
1 can sweetened condensed milk

Separate the eggs, and reserve the egg whites for the meringue. Whip together egg yolks and sweetened condensed milk. Add juice from lemons. Pour into pie crust. For meringue, beat egg whites until stiff peaks form (slowly adding 1 tsp cream of tartar and a couple of tablespoons of sugar as the peaks are forming). Brown the top of the meringue in a 375 degree oven - but watch carefully because it browns quickly once it starts. Refrigerate overnight before serving.
