Matched to a tea

Tea is not just for the afternoon anymore. Tea sommeliers are matching foods with teas. At the Samovar Tea Lounge in San Francisco, full-bodied Iron Goddess oolong tea is paired with grilled blue cheese and apple sandwiches. At the French Room at the Adolphus Hotel in Dallas, chef William Koval recently introduced a complete tea-with-food menu.
