Spicy white bean & chicken chili

Spicy White Bean & Chicken Chili

Low Fat Low Calorie High Fiber

This dish, which is ready in only 20 minutes, is a delicious blend of chicken, white beans, and green chiles in a spicy sauce. For variety, add 1 cup of whole kernel corn. Serve with a tossed salad to round out your meal.

Ingredients:
1 1/2 pounds boneless, skinless chicken breasts, cut in 1/2-inch cubes
1/2 cup chopped onion
1 can (14 1/2 ounces) white beans, undrained
1 can (4 1/2 ounces) chopped green chiles
1/2 cup chicken broth
2 teaspoons McCormick® Ground Cumin
1 1/2 teaspoons McCormick® Garlic Salt
3/4 teaspoon McCormick® Oregano Leaves
1/4 teaspoon McCormick® Chili Powder
1/4 teaspoon McCormick® Ground Red Pepper , optional

Directions:

1. Heat well-oiled skillet over medium-high heat. Add chicken cubes and onion; cook and stir 4 to 5 minutes or until done.

2. Stir in remaining ingredients. Bring to a boil. Reduce heat and simmer, uncovered, 10 to 15 minutes, stirring occasionally.
